"Vegetable Jollof Rice":
Fixings:
- long-grain parboiled rice 2 cups
- 1 enormous onion,
-minced 2-3 cloves of garlic
- 1 ringer pepper,
- 1-2 tomatoes,
- 1 cup of blended vegetables (like carrots, green beans, peas)
- 2 tablespoons of tomato catchup
- curry powder 1 teaspoon
- thyme 1 teaspoon
- paprika 1 teaspoon
- Salt and pepper to taste
- 3 cups of vegetable stock or water
- 2 tablespoons of vegetable oil
Directions:
1. Wash rice thoroughly in cold water,Channel and put away.
2. In an enormous pot, heat the vegetable oil over medium intensity. Add the slashed onions and sauté until clear.
3. Add the minced garlic and hacked chime pepper to the pot. Cook for another 2-3 minutes until the vegetables are mellowed.
4. Mix in the hacked tomatoes and tomato glue. Cook for around 5 minutes until the tomatoes separate and the blend turns out to be thick.
5. In the vessel, add curry powder, thyme, paprika, salt, black pepper and mixed vegetables. Blend well to consolidate every one of the flavors.
6. Pour in the vegetable stock or water and heat the combination to the point of boiling.
7. When bubbling, add the flushed rice to the pot. Mix delicately to equally consolidate everything.
8. Decrease the intensity to low, cover the pot with a tight-fitting top, and let the rice stew for around 20-25 minutes or until the rice is delicate and has retained all the fluid.
